My goodness!! I had no idea!!! Extraordinary!!! I understand the concept of sap being drawn upwards in a tree, but that just blows my mind!! Thank you so much for sharing this extraordinary time with us. Such beautiful trees. Such an amazing process. Who on earth thought to do such a thing. I guess people who saw a wounded tree and the extraordinary flow of sap that would have resulted. I love that you check that each tree has fully healed before tapping them again. So cool. Thank you.

Lovely story. We don't have too many maples here but I love watching the Red maple bloom. I also read that you could make syrup from other trees too but like you said it wouldn't be as sweet and would have a different flavor. Thanks for sharing!
Maple trees are amazing. Their leaves, smell, helicopter seed pods, and of course syrup are all so magical.
